Raspberry Cookies

It is time for the Owenhouse company picnic and this time around I got dessert to bring. I decided to try something new like usual. I also wanted something that was summerish. I gave these Raspberry Cookies a try. Love them. It is a perfect mixture of tartness and sweetness. Oh and by no means are these healthy!

Ingredients:

2 cups fresh raspberries
1 1/2 tablespoons + 1/3 cup sugar
1/2 lemon
2 cups flour
2 teaspoons baking powder
1/4 cup salted butter
2/3 cup heavy whipping cream

Icing:

2/3 cup powdered sugar
1 1/2 tablespoons milk

Preheat oven to 350Ëš F. In a small bowl, combine raspberries, 1 1/2 tablespoons sugar and squeeze the juice from 1/2 lemon. Set aside. In a large bowl, mix the sugar, flour and baking powder together. Cut in cubes of the butter with a pastry cutter until combined well. Stir in the heavy whipping cream. Fold in the raspberry mixture. Drop cookies onto a greased cookie sheet. Bake for 15-20 minutes until golden brown. Meanwhile mix the powdered sugar and milk in a small bowl. After cookies are cooled, drizzle over the top and serve! Enjoy!!!
