Mexican Stuffed Shells

I still have leftover shells from the stuffed jumbo shells I made a little while back. I decided to make these Mexican Stuffed Shells. It pretty much is a taco inside a shell but without all the good veggies. Good thing for tasty salsa!

Ingredients:
14 jumbo pasta shells
1 pound ground beef
1 taco seasoning to taste
4 oz. cream cheese
1 1/2 cup salsa
1/2 cup cheddar cheese
1/2 cup pepper jack cheese

Garnish:
2 tablespoons green onions
sour cream
diced black olives
extra salsa

Cook pasta according to package directions. When the shells are done, rinse them under cold water and set aside. Meanwhile, cook the ground beef until browned. Add the taco seasoning to taste. Cook for a few more minutes. Add the cream cheese in chunks and cover. Cook stirring occasionally until the cream cheese is mixed in with the beef. Set aside and let cool. Poor 1 1/4 cup of salsa on the bottom of a baking pan that is large enough to fit the shells. Stuff the shells with the beef mixture and place each one the pan. Cover and bake in a preheated oven at 350 degrees for about 30 minutes. Remove from the oven and sprinkle with the cheese. Place it back in the oven uncovered and bake for another 10 minutes until the cheese is melted. Top with your favorite garnishes, serve and enjoy!
