Coconut Bread

Several weekends ago we were at our friend’s house. My friend had made this Coconut Bread that was to die for! Her husband really enjoys it and he was gracious enough to let us try it. I loved it and couldn’t stop myself from eating it. I got the recipe from her and here it is! If you love coconut and quick breads, then you will love this!

Ingredients:
1/4 cup butter
1 cup sugar
1 egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla
2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
3/4 cup flaked coconut
Additional sugar

Cream the butter and sugar. Mix in the egg, almond extract, and vanilla and combine well. In a separate bowl, combine the flour, baking powder and salt. Slowly add the flour mixture into the butter mixture in conjunction with the milk. Mix well. Fold in the coconut. Put into a greased bread pan and then sprinkle with additional sugar. Bake in a preheated oven at 350 degrees until a tooth pick comes out clean about 50-55 minutes. Enjoy!
