Mexican Stuffed Shells

I still have leftover shells from the stuffed jumbo shells I made a little while back. I decided to make these Mexican Stuffed Shells. It pretty much is a taco inside a shell but without all the good veggies. Good thing for tasty salsa!

Peanut Butter Cookies (to die for!)

Last year I found this amazing Peanut Butter Cookie recipe. I like it because it uses less peanut butter than most recipes. Peanut butter can tend to be a little bit overwhelming. Not that this is a healthy recipe by any means. There is a lot of butter and a lot of sugar.… Read the rest

Creamy Potato Soup

After a day of single digit temperatures, there was nothing more desirable than soup for dinner. Homemade soup it was! This would be great served with Zopf bread or biscuits. Feel free to add other vegetables as I only used what I had on hand. Enjoy!

1 medium onion diced

2 tsp minced garlic

1/2 cup carrots diced

4 – 5 medium potatoes chopped

4 cups chicken broth

1/2 cream

olive oil

3-5 slices of bacon

salt and pepper to taste

In a large sauce pan, add enough oil to coat the bottom.… Read the rest

What to make for dinner? What to make for dinner? This question is always lingering around in my head before I head home from work. Do I want to take the time to make something, or just throw something together really quick? As I sat at my desk, pondering what to make, I thought about popovers.… Read the rest

Making People Fat for the Holidays

Over the past several years, my mom, sister and I have gotten together to make Christmas cookies. It has been a blast. Usually, we just make my grandma’s awesome White Cookies and then maybe one or two other cookies that we are familiar with making. Last year, we spent hours decorating the white cookies with all different colors of frosting.… Read the rest

Turkey Bolognese

I made another meal with leftovers last night! This time it was so good, I am sharing the recipe. Well, most of it. I had to make my own marinara sauce with this, but I will not go into that recipe.

Turkey Enchiladas

Of course we had even more leftovers than just the smashed harvest veggies. We have a ton of turkey! My favorite Thanksgiving leftover. Last year I tried turkey soup and a turkey pot pie. Both of which turned out great! This year I decided to give turkey enchiladas a try. That is what I spent my time on last night.… Read the rest

Smashed Harvest Veggie Ravioli

There are always so many leftovers from Thanksgiving. I decided that my smashed harvest veggies would be tasty inside some ravioli. Tonight I decided I would give making my first ravioli a try. (First noodle making experience as well). It was a little difficult considering I do not have a pasta machine, but I rolled out the dough as thin as I could.… Read the rest

My First Turkey

Brent and I hosted Thanksgiving again this year, but we were in charge of the meal. I woke up bright and early at 6 to prepare our post Huffing for Stuffing Race caramel rolls. While the dough was rising, I prepared my first turkey. I was kind of nervous because people tend to make a big deal out of the turkey.… Read the rest

Maple Glazed Chicken

The other week my co-worker brought me a food network magazine to look at. She new that I enjoyed cooking and was already picking out my Thanksgiving meal. I spent some time thumbing through the pages to choose which recipes I wanted to try. I found a handful of ones that I thought I would actually take the time to make.… Read the rest

Cardamom Bread and A Pumpkin Roll

We had a few friends over the other night to carve pumpkins. I had to make a few treats for everyone to share. Of course, I needed to use my fresh pumpkin. You cannot have a pumpkin carving party without pumpkin goodies!

The Cardamom Bread has become a staple of mine during the fall season.… Read the rest
