Shrimp (we buy frozen pre-cooked tail off)
Lime Juice
Soft Shell Tacos
Avocado
Your Favorite Salsa (Optional)
Coleslaw:
Green and Purple Cabbage
Mayo or Plain Greek Yogurt
Cayenne
Paprika
Lime Juice
Salt & Pepper
[/recipe]Brent and I were given some fresh green and purple cabbage from a friend’s garden. We were trying to figure out what to make with it. I decided to make some coleslaw for shrimp tacos. The coleslaw turned out delicious and it was a great addition to the shrimp and avocado for the tacos. The recipe doesn’t really exist because I just threw things together till it tasted good, but her is a list of what I put in it. Enjoy if you try it! It is an easy quick meal!
Judge the amount of ingredients based on how many you are feeding. It is really easy to add more if needed.
Cook the shrimp in about a tablespoon of lime juice. Meanwhile shred the cabbage and add enough mayo or greek yogurt to coat the cabbage. Sprinkle the seasonings to taste. Drizzle in the lime juice and mix well. Slice your avocado. Combine the shrimp, avocado, salsa and coleslaw in a shell and enjoy!
