No I did not end up making these last Friday evening. I did get around to it though! This is going on my list for an appetizer for parties. Now to have a party…or the time for a party.
Acovado Fries:
1 avocado (not soft)
1/2 cup breadcrumbs
2-3 tbsp flour
1 egg
salt & pepper to taste
1-2 tbsp parmesan cheese
olive oil
Dipping Sauce:
1 tbsp butter
2-3 garlic gloves minced
3 tbsp sour cream
1-2 tsp chili paste
dash of lemon juice
Sprinkle the flour on a plate. Mix the breadcrumbs, salt & pepper and the parmesan cheese in a bowl. Whisk the egg in another bowl. Slice the avocado into about 8 slices. Heat enough oil to cover the bottom of a frying pan. Dip the avocado slices in the flour, then the egg and lastly the breadcrumb mix. Brown each side of the avocado in the frying pan.
Meanwhile, melt the butter in a small frying pan. Fry the garlic for 1-2 minutes until it is lightly brown. Mix the garlic, sour cream, chili paste and lemon juice in a bowl.
Dip away and enjoy! I found that I needed to add more salt & pepper to the breadcrumbs than I originally thought. Don’t be shy! I also would have liked a little more garlic in my dipping sauce. Try it once and then adjust for your own personal taste!
