There are always so many leftovers from Thanksgiving. I decided that my smashed harvest veggies would be tasty inside some ravioli. Tonight I decided I would give making my first ravioli a try. (First noodle making experience as well). It was a little difficult considering I do not have a pasta machine, but I rolled out the dough as thin as I could. It still turned out pretty thick, but it worked. I also do not really have anything to crimp the ends of the ravioli so making the pasta stick in the boiling water was also difficult. I pinched the edges as good as I could and then tossed them in. I only lost about 2 of the raviolis. I would say my first attempt went well. Now I just want a pasta machine or the kitchen aid attachment. It was not too difficult to make the noodle dough. I think I will have to give it a try again and maybe get Brent to help roll it out thinner. We will see. I topped the ravioli off with a homemade white sauce to add some flavor. It was perfect for that extra bit of thick noodle. It made Brent happy too! I think it was a winner!
