Brent came home with a huge bag full of cherries from his mom when he was in Oregon for that brief moment. We enjoyed a ton of them, but I knew we were not going to be able to enjoy them all before they went bad. I decided to take a shot at making some jam or jelly. Whatever you want to call it.
Ingredients:
1 lb cherries
3 tablespoons lemon juice
1/4 cup sugar
1 teaspoon cornstarch
water
Pit and slice the cherries. Bring the cherries, lemon juice and 1 tablespoon water to a boil. Let simmer for about 8 minutes. Add the sugar and 1 tablespoon water. Bring to a boil again for about 3 minutes or until most of the liquid is gone. Add the cornstarch and 1 tablespoon water. Stir and let boil for about 1 minute. Let the mixture cool and then transfer to a container. Refrigerate for up to 7 days.
