I am slowly making it through a huge and continually growing list of recipes that I want to try. This week, I think I will be attempting 4 of them: 2 desserts, 1 bread, & 1 entree. We will see how they all end up turning out! I love salty caramels, so when I came across this cookie recipe it was a no brainer to try. Salt sounds weird on a cookie, but trust me it is tasty and only a dash of it. I think this is my new favorite oatmeal cookie recipe. Not that I had a favorite before. Ingredients:
3/4 cup butter softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 eggs
1 teaspoon vanilla
1 3/4 cup flour
2 cups oats
1/2 chocolate chips (dark or milk)
Sea Salt or Kosher Salt
Cream the butter and sugars together. Add the baking powder, baking soda, and cinnamon. Mix until well combined. Then add the eggs and vanilla. Mix again. Stir in the flour. Add the oats and chocolate chips and combine. Cover the bowl and refrigerate for at least one hour.
Preheat the oven to 375 degrees. Drop a tablespoon size ball onto a cookie sheet lined with parchment paper. Sprinkle the cookies with the sea salt and bake on the middle rack for about 13-15 minutes until the edges are golden brown. The middles will still be soft. Cool, serve and enjoy!
