Of course we had even more leftovers than just the smashed harvest veggies. We have a ton of turkey! My favorite Thanksgiving leftover. Last year I tried turkey soup and a turkey pot pie. Both of which turned out great! This year I decided to give turkey enchiladas a try. That is what I spent my time on last night. Fortunately, the whole process of preparing the enchiladas only took about 15 minutes. Then all I had to do was wait another 15 minutes. I made this just like I would my chicken enchiladas.
I will not tell all the secrets, but I like to mix red enchilada sauce with green enchilada sauce. It gives it a better flavor and a unique one! Mixing cheeses rather than just doing the typical cheddar also adds some better flavor. I also decided to top off these turkey enchiladas with some black olives. The turkey added a different taste, but it made them even more enjoyable. Go ahead and give mixing up the ingredients a try! You never know how great it might turn out!!
All the cheese tasted so good! Loved dinner last night!
