I wanted to try and make a pumpkin soup last year, but I never got around to it. This year, I chopped up a pumpkin and pureed it to make a Pumpkin Ginger Soup. It tasted great! We had my parents over to enjoy this meal with us. It was great food and great company. We have been having a lot of this lately! I love using fresh pumpkin.
The soup was great! I loved topping it off with fresh parsley and roasted pumpkin seeds.
I added a touch of nutmeg to the breadcrumbs. It tasted great and went really well with the soup.
The chicken and soup had to have a couple of sides: fresh dinner rolls and a nice garden salad.
What is a meal without dessert? Caramelized bananas!
