Honey Walnut Shrimp

This month has turned into food blogging month! I just cannot help myself! I have been planning two – three meals a week that are new. There are so many great recipes out there. I am constantly finding ones that I want to make, so I am planning them out now. It has been a lot of fun. Last night I made Country Fried Chicken (baked). Tonight was this recipes turn. I have had it planned for a couple weeks now, but kept forgetting to buy the shrimp. I would say that it is kind of an important ingredient for this recipe.

Ingredients:
1 cup water
2/3 cups sugar
1 tablespoon honey
1/2 cup walnuts
2 tablespoons mayonnaise
2 to 3 tablespoons condensed milk, to taste
1/2 tablespoon half and half
1 teaspoon lemon juice
pinch of salt
1 pound raw shrimp, shelled and deveined
1/2 cup cornstarch
salt and pepper, to taste

In a small sauce pan, bring the water, sugar (I would recommend using less sugar and more honey, but it is all personal preference), honey and walnuts to a slight boil. Turn to low and let simmer until it begins to caramelize. Then drain any extra liquid and let the walnuts cool. After the walnuts have cooled, heat a teaspoon of oil in the sauce pan and return to cook for 2-5 minutes. Meanwhile, put the shrimp in some boiling water until it turns pink. Put the cornstarch in a bowl and season with salt and pepper. Drain the shrimp and toss them in the cornstarch. Make sure they are well coated. Add a tablespoon of oil to another sauce pan and add the shrimp. Cook until lightly brown. In a bowl, combine the mayonnaise, condensed milk, half and half, lemon juice and salt to make the sauce. Mix well and then add any extra condensed milk, lemon juice or salt as needed. Toss the walnuts, shrimp and sauce in a bowl. It is ready to serve!!

The original recipe called to deep fry the walnuts and shrimp the second time around for cooking. I opted for a frying in a touch of oil. Try either way. I am sure it tastes amazing deep fried as well! Enjoy the pictures from my cooking experience!!
