Peanut Butter Cookies (to die for!)

Last year I found this amazing Peanut Butter Cookie recipe. I like it because it uses less peanut butter than most recipes. Peanut butter can tend to be a little bit overwhelming. Not that this is a healthy recipe by any means. There is a lot of butter and a lot of sugar. That is why it is to die for! Good thing I usually end up making these for when there are groups of people around or when I know I am going to give them away! In this case, they are going to one of the floor managers at my store because they are his favorite. He also likes to buy me milkshakes in the summer. This is payback! I do sneak a couple to save for Brent and I! If you like Peanut Butter Cookies, you must try these!

Peanut Butter Cookies

Ingredients:
1 cup peanut butter (I like to use Adams)
1 cup butter softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda

Cream together the butters and sugars. After they are mixed well, add the eggs. Mix in the flour, baking powder, salt, and baking soda. Refrigerate the dough for at least 1 hour. Grease a cookie sheet and then roll the dough into about 1″ balls. Flatten each ball with a fork, but not too much. Bake at 375 degrees for about 8-11 minutes until lightly browned. Do not over bake.
