Lasagna Soup

Soup and lasagna combined, why not? This sounded like a great alternative to the normal lasagna or soup dish. As I looked through recipes, this one caught my eye. I have to try that! I bookmarked the recipe months ago and am finally getting around to making it. Actually this is the week of making dishes that I have been wanting to try. Maybe tomorrow night or Saturday night I will go for some avocado fries? I am sharing this recipe with you. Enjoy it if you get the chance to try it.

Lasagna Soup Recipe

2 tsp. olive oil

1 lb. italian sausage

1 medium onion chopped

1 green bell pepper chopped

2-3 tsp. minced garlic

4 cups chicken broth

1 can tomato sauce

1 can diced tomatoes

1/2 tsp. salt

1/4 tsp. crushed red pepper

4-5 lasagna noodles broken

1/2 cup freshly chopped basil

3 tbsp grated parmesan cheese

1/2 cup mozzarella cheese

Heat the olive oil in a large sauce pan. Saute the onion, green bell pepper, and minced garlic in the oil for 1-2 minutes. Add the italian sausage and cook until it is no longer pink. After the meat is done cooking, drain any extra grease fromt the pan. Add the chicken broth, tomato sauce, and diced tomatoes. Bring to a boil. Reduce the heat and simmer for about 15 minutes. Add the lasagna noodles and cook until the noodles are soft. Remove from the heat and stir in the basil, parmesan cheese and mozzarella cheese. Serve with a side of your favorite bread.
