Turkey Bolognese

I made another meal with leftovers last night! This time it was so good, I am sharing the recipe. Well, most of it. I had to make my own marinara sauce with this, but I will not go into that recipe.

Turkey Bolognese

Ingredients:

  • 1/4 cup olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 carrot, peeled and finely chopped
  • 1 celery stalk, finely chopped
  • freshly grated Parmesan
  • 1 lb. shredded cooked turkey
  • 3 cups marinara sauce
  • 1/4 cup chopped fresh basil leaves
  • salt and freshly ground black pepper
  • 1 lb. spaghetti

Directions:

Heat the oil in a large pan over medium heat. Add the onion and garlic. Let them cook until they are translucent.

The add the carrots and celery and saute until tender.

Then add the turkey until it is heated all the way through. Then add the marinara sauce and let simmer for 15 minutes.

Add the basil and then stir in salt and pepper to taste. Meanwhile, cook the pasta according to package directions. After pasta is done, strain but reserve 1 cup of the cooking liquid.

Add the pasta to the turkey and onion dish. Toss the pasta until it is lightly coated with the sauce. Add the reserved cooking liquid to moisten as needed. Add a little at a time.

Sprinkle with the freshly grated parmesan cheese to taste and then enjoy!

I hope you enjoy this tasty turkey leftover dish as much as we did last night. I also whipped up a side of mashed potatoes to use up some of my Thanksgiving gravy.

Then I quickly cooked up some leftover pumpkin and tossed with brown sugar.

These both made for some tasty side dishes. My fridge is thinning down from all of those leftovers!

The meal as a whole! I have been loving these leftover dishes. I must say that I am glad to be taking a night off from cooking though. Brent decided to take on dinner duty with homemade baked mac and cheese! I am excited to try this out!
